Anniversary Dinner

Most of us can agree that the pandemic has put and continues to put a big wrench in all of our lives. I hope that you are well and healthy and so are your family and community. There has been so much turmoil from 2020 and its lasting effects on 2021 and our future can feel like too much to bear sometimes. I miss so many different aspects of my former life but like all big changes, they are good and they are bad, they don’t weigh equally but they tip from one side to the other often and I am grateful to have the openness to ride them out the best I can. With the vaccine on the horizon and our collective efforts to slow the spread, I see some light at the end of the tunnel but still, the tunnel feels long and hopeless sometimes, yet there is light.

Last week Brandon and I celebrated our 1st wedding anniversary with dinner at home and a fancy dessert. We got married on 2/20/2020 on the Big Island of Hawaii. We tried to recreate a dessert we had in Hawaii before out wedding Pineapple Crème Brulee and it was a delicious success.

I’m so grateful we were able to be together with all our family just before the pandemic changed all our lives so much. We haven’t been together in a whole year which is insanity. But our memories and our time together have helped us weather the storm plus a lot of zoom and facetime.

Also on our anniversary menu was poke nachos (my favorite), grilled filet mignon, grilled lobster tails, mashed potatoes and grilled brussels sprouts and a crushed pina colada with coconut rum. A perfect meal for a happy day.
